Tina, you could try chicken. I would suggest using 1/2 & 1/2 boneless skinless breasts and thighs, again cut into 1" cubes. If you have a whole chicken I would recommend removing the skin and cutting (disjointing) the bird into 9 or ten pieces - wings, thighs, legs, splitting the breast and the back too.
